A couple weeks ago I got an itch to make up some “Christmas” cookies! I knew the weeks leading to Christmas would get so crazy at work that I wouldn’t have time, and I was SO right! It has just been insane around here but that is a good thing. We are all so proud of what we do here at Kiepersol that we never have a problem working extra hard to spread the word about what we do!

I digress – back to the cookies. So instead of doing a massive baking day – you know those where you have extra high hopes of accomplishing all of these crazy, insanely complicated cookie recipes and then you end up covered in flour with a bunch of Pinterest fails? Yeah, I wasn’t about to go down that road again. So I baked three different recipes on three different days. It made it really nice. I’d bake a batch of cookies  and try a new recipe and still manage to walk away from the situation unharmed. So here is one of the cookies I made that weekend. They are really delicious, light and airy! I love anything lemon and these have a great lemon flavor! Give them a try for your Christmas baking this weekend!

1 Box of Lemon Cake Mix

8oz tub of Cool Whip

5 cups Powdered Sugar

1 egg

Preheat oven to 350 degrees. 

Prepare a greased cookie sheet or use a silpat

Mix all ingredients, except the powdered sugar, together in your mixing bowl.

In a separate bowl, put the powdered sugar. Take two spoons and make rounded tablespoons of dough and drop into the powdered sugar. DOUGH IS VERY STICKY!

Roll in the powdered sugar until coated then form into a ball.

Place on prepared baking sheet about 2 inches away from each other. 

Bake for about 8-10 minutes depending on your oven!

So, I saw this idea on Pinterest and totally wanted to make one! It was such an incredibly easy project and only took about 10 minutes (not including staining the wood)! The great thing about this project is you could make it as narrow or wide as you want, with as many rungs as you need! I made mine shorter but wide enough to really display the blankets. I used this stain by Rustoleum in the Kona color. It turned out so pretty and only needed one coat.

What you’ll need:

1 – 1 x 4 x 10 piece of wood

1 quart of wood stain


Long nails and drill

First: I had handsome cut the wood to the measurements I needed

Second: I stained the wood (this is for more than one project).

Third: I measured out where I wanted the rungs to go and made marks with a sharpie.

I wanted the rungs to be at an angle so it was a little harder to hold everything while drilling.

I did put 2 nails on each side of the rungs to keep them from rotating.

Final: Put your favorite blankets on display! I just love how this turned out. Ours is a little shorter and wider than the one pictured but I like it that way!

I always find myself struggling to get the men in my life gifts for Christmas! This year is no different. Normally, when they want something, they just go get it themselves! Handsome and I are starting a new tradition where we are only going to give each other stockings each year filled with small presents (remember: small presents are sometimes the BEST presents!). As we get closer to the wedding (5 months! EEK!), I find myself getting more and more emotional, in a happy way. We aren’t necessarily stressed about the wedding as we have so much done already. I just find myself tearing up when watching sappy moments more than usual or getting really emotional when people ask what my marriage wish is (I flat out started bawling the other day when someone asked me this). This time for handsome and I has just been such an emotional roller-coaster for many different reasons and I think we are finally starting to see the light at the end of the tunnel. Have any of you experienced this? Since we have been engaged for over a year now, the anticipation is just getting higher and higher. I think I may actually burst on the wedding day of just pure joy that all of the planning and executing finally reaped it’s rewards! I just can’t wait for the day to be here when I finally can look in his eyes and say “I do!” and wake up the next morning as his wife. So, October 12 if you are listening….HURRY! We simply cannot wait any longer for you to get here.

Handsome and I are dog people. Plain and simple. We started our relationship with one pup and have now grown to a family of five (three dogs, if you can’t do math or actually think I’d have a child yet!). I got Taz when he was a baby and it has been such a sweet 8 years of my life. He has the biggest personality and loves to yell at you in his own Taz way. For those of you who have met him, you know exactly what I’m talking about. He thinks he is the BIGGEST man on campus and no one, and I mean no one, is going to take his stick away from him during fetch. He’s the best and I know behind those beautiful brown eyes, there is wisdom. He wanted nothing to do with my camera in his face so he hid from me like a famous celebrity. I had to crawl under the table to get this one!

A couple of years ago I got an itch for another dog and luckily Davey entertained me on it. I started searching the web for dogs needing a good home and came across an ad for a precious goldendoodle who was about 1.5 years old and needed re-homing. The owner had too many dogs and needed to give a few up so we met them immediately and took Maggie off their hands. I don’t think the living situation was very good for Ms. Maggie because she was very timid and shy and looked terrible. We took her home and immediately cleaned her and gave her all kinds of love. Taz was not thrilled about this new addition but he eventually came around! Now, they are good buddies and Maggie looks after Taz like a momma, cleaning his eyes and what not. She has added some energy into our clan as she is always bouncing off the walls and any mud puddle is her best friend.

Last but not least, there is Aero. Last summer Davey moved down to Texas for a few weeks without me. He decided to cure his loneliness by purchasing a great dane puppy. He has always wanted a great dane and saw it as a perfect opportunity. He says that I lead him to this decision by sending him pictures of puppies, I disagree. As a baby, Aero was diagnosed with Parvo and the chances were bleak. However, Davey worked around the clock to make sure he had the best care possible and the little guy (at that point!) pulled through. We are so happy too because he has absolutely stolen our hearts! He is the biggest baby and just wants to cuddle up in your lap. At 10 months he is 33 inches tall and a measly 150 pounds. A lap dog indeed.

At times, they drive us absolutely insane. And at 7am on a Saturday when they are whining to go out, we often look at each other and wonder why we did this to ourselves. However, when they are all galloping (Taz not so much) around the yard playing, we are quickly reminded of how much joy they bring us.

1. This yellow sundress makes me crave spring/summer. Can’t wait for the days when the Texas heat is so brutal that it only makes sense to wear a flowy sundress and some wedges.

2. What girl doesn’t dream of running around in tutus again and not having a care in the world? This picture is a great reminder to “feel like a kid again”!
