A couple weeks ago I got an itch to make up some “Christmas” cookies! I knew the weeks leading to Christmas would get so crazy at work that I wouldn’t have time, and I was SO right! It has just been insane around here but that is a good thing. We are all so proud of what we do here at Kiepersol that we never have a problem working extra hard to spread the word about what we do!

I digress – back to the cookies. So instead of doing a massive baking day – you know those where you have extra high hopes of accomplishing all of these crazy, insanely complicated cookie recipes and then you end up covered in flour with a bunch of Pinterest fails? Yeah, I wasn’t about to go down that road again. So I baked three different recipes on three different days. It made it really nice. I’d bake a batch of cookies  and try a new recipe and still manage to walk away from the situation unharmed. So here is one of the cookies I made that weekend. They are really delicious, light and airy! I love anything lemon and these have a great lemon flavor! Give them a try for your Christmas baking this weekend!

1 Box of Lemon Cake Mix

8oz tub of Cool Whip

5 cups Powdered Sugar

1 egg

Preheat oven to 350 degrees. 

Prepare a greased cookie sheet or use a silpat

Mix all ingredients, except the powdered sugar, together in your mixing bowl.

In a separate bowl, put the powdered sugar. Take two spoons and make rounded tablespoons of dough and drop into the powdered sugar. DOUGH IS VERY STICKY!

Roll in the powdered sugar until coated then form into a ball.

Place on prepared baking sheet about 2 inches away from each other. 

Bake for about 8-10 minutes depending on your oven!

Since the area around our “house” isn’t the nicest, I wanted to get out and take some pictures in a different setting. We were on the way to my office and had to stop at our grocery and I thought, why not!? Living in the middle of nowhere doesn’t exactly provide a plethora of cool backgrounds on which to take pictures for this blog. At our local grocery, they highlight locally grown produce all the time and these peaches were so beautiful! I love groceries that  make a focal point local farmers. And how gorgeous are those sunflowers!?

On another note… I just LOVE this black dress I got from Loft last December. It is perfectly comfortable and flattering. Plus it can be worn in all seasons. My outfits have to be so versatile for work because I never know if  I am going to be serving food, bartending, taking care of a clogged toilet (I know, gross but true) or working in my office on inventory! This dress with any cardigan thrown over it is a very easy work outfit and I know I will be prepared for anything while looking cute! There is something so easy about summer. Less makeup, air-dried hair is just fine, and a simple tank top and a cute skirt does the trick. I find my time to get ready is significantly reduced. Just a little cover-up and powder on the face and a nice lipstick , simple and cool outfit and you are ready to go! I also love how awkward I look in these pictures. I know they aren’t the best but when Handsome leaves in the dark hours of the morning and doesn’t come home until it’s nearly dark outside at night, we take what we can get. I just love that hard-working man! I can’t wait to marry him in just three months. How’d I get so lucky?

I love this outfit because it is simple but fun! The khaki skirt makes it versatile and could be worn with heels, but for a taco night with my handsome, I opted for my Coach converses 🙂 Plus, you get some pics of my babies! Handsome also decided to take some fun pictures with his fancy camera on his phone so that is why the colors are all off. But it actually makes for some fun pictures!
