1. This yellow sundress makes me crave spring/summer. Can’t wait for the days when the Texas heat is so brutal that it only makes sense to wear a flowy sundress and some wedges.

2. What girl doesn’t dream of running around in tutus again and not having a care in the world? This picture is a great reminder to “feel like a kid again”!

3. Cinnamon Almond Milk Ice Cream. This may be the first ice cream I make of the season. I love my Cuisinart Ice Cream Maker!!!

4. This DIY Tablet Holder project is too cute. So handy for having in the kitchen to read recipes off of and less than $2! Can’t wait to try it!

After working 25 hours in 2 days, the LAST thing I wanted to do was put on normal clothes (i.e. not yoga pants or sweats!) and go into town. I honestly felt like staying curled up in bed all day but we had things to take care of so on went the jeans. I figured if I am going to get dressed, I might as well make it blog worthy, right? Davey graciously took pictures of me again as I awkwardly posed in our “front yard” while our pups looked at us longingly through the fence. As soon as the pictures were finished we made a mad dash inside so the puppies wouldn’t curse us anymore. We both feel an overwhelming amount of guilt for leaving them outside in our big fenced yard. Not sure why, damn those puppy eyes. Anywho, this outfit was perfect for running errands on a chilly day. Come on Spring! This cotton jacket is a perfect accessory to any outfit because it’s comfortable and still dressy enough to wear over a dress or with a skirt for work! Plus, I love mixing black and brown. Don’t you feel like such a rebel when you do something you’ve always been taught not to (like mixing black and brown)? Yep, rebel is my middle name.

This past weekend, our event center Bushman’s Celebration Center, hosted the annual Beauty and the Beast Bike Race. It was such an awesome event to be a part of even if it was two very long days at work! This race benefits the Texas Wounded Warrior Mission and the Lone Star Circle of Life, two very deserving charities. Friday was spent preparing the building for the onslaught of bikers to arrive the next morning. We all prayed that the weather would shape up and maybe be somewhat sunny for the race, however, mother nature always has different plans!

So Saturday morning at 6am the bikers started showing up, donned in their warmest biking gear, ready to tackle the hill known as “The Beast.” This race is dubbed Beauty and the Beast because the tour winds you around the beautiful landscape of East Texas and then at the very end makes you climb “The Beast,” a very steep hill here in Bullard, Tx. The race offers varying distances for bike riders ranging from 12 miles to 67 miles but they all have to climb The Beast! Bikers from all over Texas come to town for this race, however, the 1st place men’s finisher was from Tyler! How awesome!

After the race, they had freshly grilled hamburgers and hot dogs for the racers so they could recuperate and celebrate with their loved ones! It really was such a fun event to be a part of and see the sense of accomplishment on everyone’s faces! Can’t wait for next year.

Every Sunday night, the “family” here at Kiepersol gathers at Pierre’s house and has a family dinner. Pierre and Kelly always make a wonderful meal and last Sunday was no exception. For St. Patrick’s Day, Pierre made homemade corned beef, sauerkraut and potatoes. It was a feast and delicious for sure. So to contribute to the meal, I made this delicious but ridiculously simple lemon pie. I’ve had the recipe pinned on Pinterest for a while and finally had the chance to make it! It will be a great recipe for summer because it’s cool, refreshing and doesn’t require an oven!

Ingredients:

2 cans sweetened condensed milk

3/4 cup fresh squeezed lemon juice

1 ready made pie crust

Step 1: Take two cups of sweetened condensed milk (I just used 2 cans) and mix it with 3/4 cup of freshly squeezed lemon juice using a whisk.

Step 2: Pour the sweetened condensed milk and lemon mixture into ready made pie crust. I used the shortbread version which was a great complement to the lemony pie. You could also use the graham cracker one too!

Step 3: Refrigerate for at least an hour to set and then enjoy!  You could also use cool whip as a nice addition to the pie if desired. 

Step 4: Try not to eat it all in one sitting! 🙂

Davey is a fashion blog photographer in training. Bless his heart for putting up with me taking the camera everywhere (although he claims he is happy it is being used now). And now, he has gotten roped into taking outfit photos of me as well. He acted like true paparazzi, snapping picture after picture. Lesson #1: QUALITY vs. QUANTITY. Oh well, this will just have to do. The bright side? The photos can’t go anywhere but up 🙂

We decided to do an impromptu dinner out Wednesday night for our one year engagement anniversary. We both hate having multiple anniversaries. Therefore, instead of celebrating when we met, first kissed, started dating, etc, etc, etc, we just picked to celebrate our engagement anniversary this year. Thank goodness we only have to keep up with one anniversary next year! Eeee! Oh you don’t know what a bunch of random “e”s are doing followed by an exclamation? Don’t mind me, I’m just squealing like a little girl.

So I threw this outfit together. It’s fun to have a spontaneous night to get dressed up. I love the idea of mixed prints but can’t always pull it off well. I thought the subtlety of the flower print and the navy t-shirt helped break up what could be a sensory overload. A neutral wedge and clutch just helped to pull it together but not take away from the outfit.

So, I have been listening to the John Tesh Radio Show in the mornings and really love his show! He has some awesome information and tidbits to think about.

I know summer (and bikini season) is right around the corner and I’m sure most women are fretting about how they will look in their teeny weeny bikinis!

Winter always seems to be the best time of the year for me to shed some pounds. I’m not sure if it is being cooped up, colder weather or the threat of bikini season that helps me, but once the warmer weather hits, it’s easy to pack those pounds back on. Here are just some things to remember that I heard on John Tesh’s radio show about why we may GAIN weight in the spring!

1. Cadbury eggs are on EVERY check out line! With Valentine’s and Easter holidays in the early part of the year, the grocery stores are PACKED with candy. Just try and remember that moderation is key! Check this out: 90 million chocolate bunnies are sold and 16 billion jellybeans. WOW!

2. We start exercising more. This may sound odd but because the weather is warmer and we become more active, our appetites grow! You can always eat through a great workout if you aren’t careful about fueling your body properly. Exercise really should suppress your appetite so if you are feeling hungry after a workout, you may be dehydrated so try drinking water before eating!

3. Longer days! Because the days are longer we may start going to bed later than normal which leads to tired eating the next day. Also, our eating schedule may change to accommodate the longer days which gives us more time in between meals for snacking. Try to stick to 5-6 small meals a day and limit snacking in between. If you feel hungry, try drinking water or hot tea!

4. For you coffee drinkers, stick to hot coffee with a little skim milk and sugar. When the weather warms up, iced coffee becomes the drink of choice and can usually pack on more than double the calories of a regular cup of joe. So try and stick the normal hot version of coffee if you can!

One year ago today the most amazing man I could ever imagine loving asked me to marry him. Davey’s proposal will always be a memory that I NEVER forget. Sitting on our secluded patio overlooking the beautiful Mediterranean Sea on the Amalfi Coast has to be one of the most romantic locations imaginable. He nervously (me not knowing it was nerves at the time) fumbled with his wine glass, drinking enough liquid courage so he could somehow hold it together to ask me to be his wife. After emphatically saying “yes” a million times, Seth and Heather (listening through the window from inside the house) popped open some wine and we celebrated only the way Italians would — with drinks and food. It will be a trip I never forget and my only regret is not having better pictures of the actual proposal. It is okay though, I will have the memory of Davey’s face when I said “yes” ingrained in my mind forever.

Hello, friends! Yes, this is my second attempt at starting a blog but it is a New Years Resolution to actually stick with it this year (who actually keeps theirs anyways?). So please give me a pat on the back because I already have TWO posts ready to come your way! Yay for small victories! Anyways, recently Davey and I have made another move to Tyler, Tx. I think we are going to adopt the nomadic lifestyle actually. Less baggage (literally!) and who doesn’t like to be in a perpetual state of moving anyways? All joking aside, this move was primarily for me. I was offered a job here to run this place: Kiepersol Estates Bushman Celebration Center . I am SO stoked and love the job so far. It’s a beautiful place with so many different facets that can appeal to just about anyone. I used to always say that I would never get into this industry after watching my parents do it for most of my life. However, the apple just didn’t fall very far from the tree. Turns out I have the genes to plan parties, organize events, and take care of people. Who woulda thunk?! 

We are so very excited about this opportunity and embarking on a new journey in life. This move was just good for our souls. As one of my friends put it ” the things you see outside are more beautiful, the sky is bluer, everything changes for the positive.” And boy is she right! Everyday I am actually excited to get out of bed and walk into this beautiful place and work hard for this great company. 

SO, I have planned for this blog just tidbits of all different things: recipes, fashion, event updates here at Kiepersol, health and wellness information, etc. So get excited! AND, if you ever find yourself in East Texas for no apparent reason (ha!) stop by Kiepersol Estates and see us! It’s a magical place, set in the tranquil fields of Tyler, Tx. We offer great wine, fabulous steaks and food, and just an overall peaceful outlook on life.
